GOURMET EXPLORATION AT BOREAL

Behind the doors of Le Boréal, a new culinary star emerges, bearing the distinctive signature of two gastronomic virtuosos. They are Philippine Jaillet, trained at the Ferrandi school and honed by her time with the renowned Pierre Hermé, and Charles Neyers, already acclaimed at the helm of La Traversée, Petite Fleur and Ramey’s Burger. Together, they orchestrate a symphony of flavours, creating a four-handed menu where passion and expertise meet in harmony.

Their credo is homemade, seasonal cuisine, featuring carefully selected producers and ingredients mainly from local, sustainable agriculture. It’s a concrete commitment to a cuisine that celebrates quality, authenticity and respect for the environment.

From the moment you enter, Le Boréal captivates with its atmosphere of zinc warmed by wooden bistro chairs and its long counter inviting conviviality. An elegant destination where every dish is an edible work of art.

A mushroom chawanmushi with chanterelle pickles is combined with porcini mushrooms and parsley oil to enhance the dish’s aromas. A promising start to a gourmet experience. A first step accompanied by a glass of white wine “Les Mouettes” from Domaine Thomas Zurbach.

The journey continues with a melt-in-the-mouth poultry and mushroom cream, where the spinach adds a colourful touch that awakens the eyes, and the aromas whet the appetite. A harmony without a false note, with no trace of sauce left on the plate.

And to round off the experience, a chocolate mousse spiced up with green pepper lands on the table. A recipe that may seem simple, but also shows the quality of a restaurant. Every bite is a delight. The chocolate melts and coats the mouth with extreme sweetness.
