FIEF, ECO-RESPONSIBLE, SUBTLE AND CREATIVE CUISINE.

Conceived by chef Victor Mercier, this address in Paris’s 11th arrondissement is an invitation to travel. It’s an exploration made possible by the use of French produce. The chef, known for his appearance on the TV show Top Chef, has since travelled the world in search of combinations that will delight your taste buds, to offer committed dishes with surprising flavours. 

Conceived by chef Victor Mercier, this address in Paris’s 11th arrondissement is an invitation to travel. It’s an exploration made possible by the use of French produce. The chef, known for his appearance on the TV show Top Chef, has since travelled the world in search of combinations that will delight your taste buds, to offer committed dishes with surprising flavours. 

From the outset, the glass frontage of the establishment offers an unobstructed view of the open kitchen and counter, which can accommodate up to eight guests for warm, friendly service, offered by sous-chef, Paul. As for the dining room at the back, it can serve around forty diners in a cosy, intimate and minimalist setting.

Opening in 2019, FIEF stands for “Fait Ici En France”. The restaurant delivers on its promise by working with a single producer. The raw materials, all sourced locally, enable us to offer a cuisine that adapts to nature, using French culinary techniques and ideas from elsewhere. For example, vanilla is replaced by meadowsweet and glutinous rice paste by dry rice. 

In 2022, the restaurant was awarded its first Michelin star, thanks to high-quality cuisine served on geometric plates where colours are used to create a creative experience. The plates are technically laid out, refined and precise, allowing the food to reveal itself in the mouth. 

An emblematic dish imagined by this gastronomy enthusiast during the summer was a tomato and dried mochi. A menu for all tastes that changes and adapts according to the weather and the seasons. Whether for tasting, omnivores or plant lovers, the menu is a source of multiple inspirations.
