OKTOBRE, THE ADDRESS THAT AWAKENS YOUR SENSES

Some addresses make a greater impression than others, thanks to their attention to detail and elegance. Such was the case with Oktobre, located in the heart of Saint-Germain-des-Prés. This place, orchestrated by young Chef Martin Maumet, combines taste, beauty and refinement. 

We start with the architecture and decoration, designed by Bateaumagne, all in finesse, noble materials, oak wood for the tables and banquettes, ceramics for the hanging lamps, handmade tiles from Portugal on the walls, which add a graphic touch in line with the stripes of the fabric used for the seats. A flawless performance for this new address, which replaces the Kitchen Galerie Bis restaurant, where 22-year-old Martin Maumet won his Chef’s position in 2013.

Chef William Ledeuil (Ze Kitchen Galerie & Kitchen Galerie Bis) saw Martin Maumet’s creativity and the desire to learn came to life, and instiled in him his vision of cooking and catering with atypical seasonings and the discovery of new flavours. Today, at the helm of Oktobre, with a K, in reference to the restaurant that revealed him, Chef Martin Maumet offers a menu in the image of the place, original and delicate. 

We begin with an appetiser served as 3 hors d’oeuvres that change with the seasons. Presented in small bowls inspired by Japanese cuisine, we are greeted by Celeriac Tempura with yuzu kosho mayonnaise, a delicate breading and melt-in-your-mouth vegetable, Vegetable Bouillon with kimchi, mushroom, seaweed and sesame condiments, a real taste shock, and finally, Pleurotus with egg yolk and parmesan condiment, simply delicious.

Then comes the main course: the catch of the day, pollack, zucchini, new potato, fennel, olive and bouillabaisse juice, an “intelligent” plate in which each ingredient has its own importance. The result is a balanced, original and highly palatable combination of flavours.

Last but not the least, the apple dessert, cider caramel and citron condiment, served in the form of a tartlet, is a total regression between creaminess and gourmandise.
