COLVERT, AUTHENTIC AND GENEROUS

Located in the heart of Saint-Germain des Prés, the Colvert restaurant has undergone a complete overhaul, with a brand new team in a totally transformed setting. 

With its blend of modern auberge, bistronomy and gourmet cuisine, everything has been designed to give pleasure to all epicureans and lovers of good food.

Bistro furniture with a magnificent wood and marble counter, transformed into a table d’hôte and lit by opaline pendant lights, gives the place a warm, modern ambience. 

Chef Arnaud Baptiste, who has worked in the kitchens of Le Meurice (Paris), Carré des feuillants (Paris) and Yannick Alléno’s signature bistro, L’Allenothèque (Paris), and whom some may have discovered in the Top Chef 2021 TV show, dares to combine audacity and generosity. 

We began our tasting with an organic egg 64, crispy onion confit, fine poultry consommé with chive oil, 18-month Comté cheese and fresh herbs. It was a real taste shock, with powerful tastes and a perfectly balanced combination of flavours.

 

Then comes the main course, guinea fowl from the Gatinais region, cooked twice, with Swiss chard, buttered beans, black garlic and smoked piquillos, with a preference for the first course, crispy on the outside and melting on the inside, enhanced by a spice reduction that awakens the taste buds to a full-bodied jus that’s simply regressive.

Finally, a dessert based on figs, roasted au naturel, raw & in pickles, fig leaf granita and ice cream, all soft and delicate. The idea of using the leaf as a granita was a great one, bringing a real freshness to the dish. A comforting dish, in the image of this Parisian address. 

To accompany the dishes, the sommelier offers a fine selection of wines, from grands crus to vins de copains, at all prices.
