Conceived by chef Victor Mercier, the address is located in the 11th arrondissement.e This Parisian arrondissement has all the hallmarks of an invitation to travel. An exploration made possible thanks to the carefully selected ingredients sourced from across France. The chef, known for his appearance on the show Top chef, has since travelled the world in search of partnerships that will delight your taste buds to offer committed dishes with surprising flavors. 

The restaurant's glass facade offers an immediate and unobstructed view of the open kitchen and the counter, which can accommodate up to eight guests, for a warm and friendly service provided by sous-chef Paul. The dining room at the back can seat around forty people in a cozy, intimate, and minimalist setting.

Opened in 2019, FIEF stands for "Made Here in France." The restaurant lives up to its promise by collaborating with only one producer. All the ingredients are locally sourced, allowing the restaurant to offer cuisine that adapts to what nature provides, using French culinary techniques and ideas from elsewhere. For example, vanilla is replaced with meadowsweet, and glutinous rice paste with cuttlefish. 

In 2022, the restaurant was awarded its first Michelin star thanks to its high-quality cuisine served on geometric plates where colors come together to create a creative experience. The presentation is technical, refined, and precise, allowing the food to shine on the palate. 

An iconic dish created by this passionate foodie during the summer was a tomato and cuttlefish mochi. The menu offers something for everyone, changing and adapting to the weather and seasons. Whether for a tasting, for omnivores, or for plant-based lovers, it's a source of diverse inspiration.
