There are restaurants that leave a deeper impression than others due to their attention to detail and elegance. This was the case with Oktobre, located in the heart of Saint-Germain-des-Prés and orchestrated by the young chef Martin Maumet, who combines taste, beauty, and refinement.

We begin with the refined architecture and décor, designed by Bateaumagne: noble materials, oak for the tables and banquettes, ceramics for the pendant lights, and handmade wall tiles from Portugal that add a graphic touch, echoing the stripes of the fabric used for the seating. A flawless design for this new establishment, located in the former Kitchen Galerie Bis restaurant where Martin Maumet, then 22 years old, landed his head chef position in 2013.

Passing on expertise with passion and generosity always makes for wonderful stories. Chef William Ledeuil (Ze Kitchen Galerie & Kitchen Galerie Bis) witnessed the birth of Martin Maumet's creativity and thirst for knowledge, instilling in him his vision of cuisine and the restaurant industry, introducing him to unusual seasonings and new flavors. Now at the helm of Oktobre – with a K, a nod to the restaurant that launched his career – Chef Martin Maumet offers a menu that reflects the restaurant's character: original and refined.
We begin with an appetizer served as three hors d'oeuvres which change according to the seasons. Presented in small bowls with a Japanese design come a celeriac tempura, yuzu kosho mayonnaise, with a delicate breading and melting vegetable, a vegetable broth, kimchi, mushroom condiment, seaweed and sesame, a real little taste shock and, finally, oyster mushrooms, egg yolk condiment, parmesan, simply delicious.

Then came the main course: pollack (caught that day), zucchini, new potato, fennel, olives, and bouillabaisse jus. A cleverly designed dish where each ingredient plays a significant role. The result: a balanced, original, and very pleasant combination of flavors.
Finally, dessert: apple, cider caramel, citron condiment. Served as a tartlet, this sweet treat offers a complete escape, a perfect blend of creaminess and indulgence.
