Opening in 2021 in Piedmont, this 12-room boutique hotel with décor inspired by the surrounding flora and fauna, complete with a stunning vaulted spa, occupies a prime location amid the Monferrato vineyards.
The hotel has taken over an eight-hundred-year-old farmhouse, restored by the British design agency These White Walls, and added an extension that houses the two restaurants, Le Bistrot and the gastro L’Orto, where Michelin-starred chef Andrea Ribaldone cooks seafood from the Ligurian coast and vegetables grown in the area.
His smoked beet tartar with cherries, Robbiola del Roccaverano ice cream and seeds is a big hit.
Respect for the land and for nature in general is also evident behind the scenes with limited waste production, a geothermal system, and state-of-the-art insulation. The owners themselves made a point of looking for, and eventually found, a natural water source to supply the site: an approach that makes sense.
