BLUENESS ANTWERP, SERGIO HERMAN’S NEW RESTAURANT WITH A FRENCH-JAPANESE ACCENT

Belgian chef Sergio Herman’s newborn has taken up residence in a building that combines a cosmopolitan and oriental atmosphere.

On the menu, a table inspired by modern French cuisine with Japanese influences: oysters with dashi vinaigrette; Japanese waffles with tuna tartar, spicy fish roe and daikon; langoustine with raw cream avocado and caviar. For the sweet tooth, white lady with matcha and Siberian omelet with Japanese whisky, figs and rosemary.

As for the interior design, it was entrusted to the Danish studio Space Copenhagen, known for having worked for the 11 Howard Hotel in New York, the Stratford in London, but also the Noma in Copenhagen.

The duo takes guests into “the worldly dynamics of a bar with an open kitchen connected to the intimate atmosphere of the restaurant.” In fact, customers can choose between excitement and tranquility, either with the more intimate experience of the candlelit restaurant or with the bustle and activity of the open kitchen. A dual atmosphere that also features contemporary design, including work by Germans Ermics, Mae Engelgeer, Destroyers Builders, Verilin, and Valentin Loellman.
