Sylvestre Wahid spices up Provence

Coral lentils and strawberries simmered with cardamom, burnt grapefruit, but also heirloom tomatoes in a tandoori spice crust, grilled Pugliese burratta served melting, and blue lobster with garam spices and fresh herbs, to finish with fresh mango like a lassi… the Pakistani-born chef invites you to travel along the spice route leading to the Orient in Asia, by taking a seat at his new summer table, Alya’s, in the Auberge de Saint-Rémy run by his brother Jonathan Wahid and his sister-in-law Fanny Rey, in Saint-Rémy de Provence.

His signature dishes are also his Proust’s madeleines, some of his childhood flavors paying tribute to his mother’s cooking. Spices and herbs will meet the seasonal products of the Alpilles, the fruits and vegetables of his own garden in Rognonas. Let’s toast to this flavorsome marriage with a home-made spiced beer.
