Dabiz Muñoz, rock’n’roll chef

After starting his career in London in the early 2000s working in international restaurants, 20-year-old Dabiz Muñoz returned to his hometown, Madrid, to launch his own establishment: DiverXO opened in 2007 in the Tetuán district. Just six years later, in 2013, the restaurant – which has moved and expanded several times – gets the ultimate accolade: three Michelin stars. This is the consecration for David Muñoz, who has been passionate about cooking since he was a child, but also about football. Fans of the TV showTop Chefmay remember his appearance on the show in 2020, during which we (re)discovered his exuberance, including dishes served directly onto the customers’ hands. At DiverXO, everything is indeed unexpected: the décor, first of all, which is the work of interior designer Lázaro Rosa Violán, who has placed pigs on the wall. Then there are the surprises on the plate, where the chef has invented “liquid cuisine.” The two tasting menus comprise a range of dishes, each as unusual and striking as the next, with pronounced Asian influences. Building on the success of his gourmet restaurant, the chef has also opened two other venues, starting with StreetXO, which opened eight years ago, where he offers more affordable tapas. A second address then opened in 2016 in the English capital. During the pandemic, the unstoppable Dabiz Muñoz also came up with GoXO, which offers delivery-only dishes.
