Nîmes: Georgiana Viou enters the arena

It is in the heart of Nîmes, in a hotel nestled in a former private mansion classified as a historical monument, that the chef Georgiana Viou has just set up shop. Throughout a unique five-course tasting menu (49 euros), the chef, originally from Benin, unveils a mixed cuisine, tinged with references to her different ports of call, such as the crispy amuse-bouches with Nîmes brandade or the “Moorish” vacherin in reference to Marseille, her last address. The ultimate in conviviality: the chef will invite some of her colleagues for four-handed dinners several times a year.
