Burger father & son: the new restaurant of the three-Michelin-starred chef

Chef Yannick Alléno and his son Antoine are embarking on a new concept in the heart of Beaupassage, a chic and gourmet street in Paris’ 7th arrondissement. The former Allénothèque becomes Burger Père et Fils by Alléno, but just for this summer 2021.

The address is not unknown, but the experience is new in the world of street food. Yannick Alléno and his son Antoine have transformed the Allénothèque’s offering for a season. The art gallery restaurant with a superb terrace in a private courtyard offers, until the end of the summer, a very “Parisian” interpretation of burgers, applying the specialities of the capital.

On the menu of Burger Père et Fils by Alléno are three original recipes: the first, called Arsène, is “very Parisian” according to the chef, and is made up of a matured meat, seasoned and cooked like a steak au poivre or “Maître d’hôtel” style in an atypical bread created for the occasion. Marguerite, is a local version with its Normandy veal, accompanied by mushroom duxelles, and covered with isigny cream and nutmeg. The last, Lupin, is designed for vegetarians. It features a “vegetable black pudding,” made of black rice, beetroot and semolina and obviously served with an apple condiment.

In April, the Michelin-starred chef of the Pavillon Ledoyen offered picnic baskets by Alléno, available for delivery and takeaway, to cope with the closure of restaurants. With all these transformations, Alléno shows that “reinvention” is the key word in gastronomy.
